Rabia's Fantastic Chutney
40 servings 11 min 10 min prep
4 cups fresh cilantro
1/2 cup spearmint
2 medium tomatoes
4 jalapenos (to taste)
5 ounces tamarind paste
6 garlic cloves
1 onion
3 whole dried red chilies (optional)
Blend all until liquid.
I freeze this in little cups so we have it on hand all the time.

Add a few when boiling or steaming, and stir in a few more when the peas are cooked.
Drain boiled peas first and the heat from the peas will heat the oils in the leaves.
Have been told you should tear the leaves, not cut them. If you like them like me use them whole,

Makes 12 Cold Vegetarian Fruit Cakes Baked Fayre
Ingredients
225g/8oz Berries e.g. Raspberries, Blueberries, Blackberries
225g/8oz Self Raising Flour
½ teasp Salt
1 tbsp Freshly Chopped Mint Leaves
100g/4oz Butter
175g/6oz Caster Sugar
2 Eggs, beaten
120ml/4fl.oz. Milk
1 teasp Vanilla Extract
Brown Sugar
Instructions
1. Preheat the oven to 190C, 375F, Gas mark 5 and lightly oil a 12 hole muffin tin. In a bowl, mash two thirds of the berries, keeping the remaining one third whole. Set aside.
2. Place the flour, salt and mint in a large mixing bowl and mix well. Set aside.
3. In a separate mixing bowl, cream together butter and caster sugar.
4. Add the eggs, a little at a time, mixing well between each addition then add the vanilla and half the milk and mix well.
5. Add the mashed berries and mix well.
6. Add half the flour mixture, mix briefly then add the rest of the milk and the rest of the flour mixture, mix but just enough to moisten the dry ingredients.
7. Quickly fold in the whole berries then spoon the mixture into the prepared muffin tin. Sprinkle with brown sugar and bake for 25 to 35 minutes.
8. Allow to cool for 10 minutes then remove from the tin and cool on a wire rack..

using sugar and water heat slowly in a sauce pan muddle in leaves and then you have a spearmint infused syrup to make mojitos, pour on fruit salads, serve with ice cream and chocolate sauce, pour in your tea, serve with cheesecake

What is a similar or a good tea with lemongrass and spearmint?
What is a similar or a good tea with lemongrass and spearmint?
I had a organic Tazo Green tea and it was so good it was in a bottle it had lemongrass and mint.
Does anyone know if it is possible to buy the leaves to make it or bags ...any tips .....of what can i do to get a similar taste...Tazo sells the Zen is that sort of like it .....?
